- 1⁄4 cup jumbo oats
- 2 Tablespoons chia seeds
- 1⁄4 cup coconut milk
- 1⁄2 cup water
- 1⁄4 teaspoon cinnamon
- 1 pear
- 1⁄2 cup walnuts, toasted and chopped
- 1-2 Tablespoons ground flaxseeds
- In a container combine oats, chia, coconut milk, water, and cinnamon. Mix well. Grate half of the pear and add to this mix, combine well. Place in fridge overnight.
- Toast 1/3 cup of walnuts in the oven or in a pan on the stove. Once cooled, chop and store in an airtight container.
- In the morning, chop the remaining half of the pear and add to the mix from the fridge. Top with chopped, toasted walnuts and ground flax seeds.
