Can’t stop eating this! I am loving the recipe below for breakfast, lunch or dinner, but it has actually worked for breakfast for me for the last month. I started having it while in Portugal on my retreat, and I’ve kept going. This is basically what I have had every day for breakfast in some variation. Sometimes, I spread hummus on the toast, or roasted red pepper/aubergine spread (store bought) or the pesto from this recipe, or nothing at all and just drizzle olive oil on the bread (yes, I eat bread aka carbs- gasp I know…and every single day for the last month too!)
