Can’t stop eating this! I am loving the recipe below for breakfast, lunch or dinner, but it has actually worked for breakfast for me for the last month. I started having it while in Portugal on my retreat, and I’ve kept going. This is basically what I have had every day for breakfast in some variation. Sometimes, I spread hummus on the toast, or roasted red pepper/aubergine spread (store bought) or the pesto from this recipe, or nothing at all and just drizzle olive oil on the bread (yes, I eat bread aka carbs- gasp I know…and every single day for the last month too!)

Healthy Toast
  1. 2 pieces of German bread, sour dough or gluten free bread, toasted
  2. 4 Tablespoons hummus, pesto or other spread of choice
  3. 1/2-1 cup rocket/arugula
  4. A few thin slices of red onion
  5. 1 small tomato, 6 thin slices
  6. 1 small cucumber, 6 thin slices
  7. Sea salt
  8. 1 Tablespoon capers
  1. After toasting the bread, spread 2 tablespoons of hummus on each piece of toast. Top each slice with rocket, red onion, cucumber, tomato and capers. Sprinkle with sea salt. Yum!
